Pumpkin Whoopie Pies with Maple Fluff Crème

Mmm all of fall in one bite! This recipe is so easy to make, you'll definitely want to make double! Whether a bake-sale treat, or holiday pleaser, these fluffy sweet bites of pumpkin are sure to make you swoon. Plus, did I mention the #marshmallowfluff creme?!? I used real, New Hampshire Maple Syrup to give my filling a sweet and nutty local flavor - the real deal, which makes all the difference!

 

Recipe Yield: 14 generously stuffed whoopie pies

Prep: 20 minutes

Bake: 12-14 minutes


Ingredients:


Cookies:

1 cup Light Brown Sugar, packed

1/2 cup Canola Oil

1 cup Pumpkin Puree

1 egg

1 1/2 tsp vanilla

1 tsp cinnamon

1 tsp ground ginger

1 tsp pumpkin pie spice

1/2 tsp ground cloves

1/2 tsp allspice

Pinch salt

1 1/2 cups flour (I used a 1:1 ratio of WW to all-purpose)

1/2 tsp baking powder

1/2 tsp baking soda


Preheat oven to 325 degrees Fahrenheit. Line two baking sheets with nonstick silicone baking mats (I linked my favorite ones!) or parchment paper. Set aside.


In a large mixing bowl, combine brown sugar, oil, pumpkin, egg, vanilla, cinnamon, pumpkin pie spice, ginger, cloves and allspice. Whisk until smooth. Add flour, baking powder, baking soda, salt, and stir until just combined. (Batter will be more like cake batter vs. cookie dough).


Scoop or pipe (using plastic bag with corner snipped or pastry bag) equal sized mounds onto baking sheet ~2" apart.


Bake for 12-14 minutes or until tops have set. They firm up while they cool. While cookies are baking, prepare the creme filling.


Maple Crème Filling:

1/2 cup unsalted butter, softened

1 1/2 tsp vanilla

2 cups powdered sugar


In a medium bowl with mixer on medium speed, beat the butter with sugar, and fluff. Add vanilla, and #maplesyrup and beat until smooth/fluffy. I chose to use real maple syrup from a local NH producer, Ben's Sugar Shack. But if maple syrup is not available in your area, check out their products online!


Once the tops/cookies have cooled, apply a generous amount of frosting to the flat side of one cookie, top with a second cookie, rounded side facing the sky!
